- Olive oil
- ½ tsp chili powder
- ½ tsp ground cumin
- ½ tsp paprika
- ½ tsp cayenne pepper
- ¼ tsp garlic powder
- ¼ tsp salt
- Preheat oven to 200 degrees.
- Using a strainer drain and rinse the chickpeas underwater.
- Lay on a kitchen towel and patch dry, discarding any of the skins that may fall off. Let the chickpeas air dry until completely dry.
- Line a rimmed baking sheet with parchment paper. If using parchment paper lightly spray the sheet with cooking oil.
- Spread the chickpeas out evenly over the baking sheet.
- Cook for 20-30 minutes stirring every 10 minutes until golden brown.
- While the chickpeas are roasting, prepare the spice mix. Combine all the ingredients in a small bowl and set aside.
- Once out of the oven, transfer the hot chickpeas to a bowl.
- Add ½-1 tablespoon of olive oil and toss to coat the chickpeas evenly.
- Sprinkle the spice mix over the chickpeas and toss again to ensure they are well-coated.
- Serve immediately and enjoy!
